Pizza

Most of you have already seen these pics, however I thought I'd just post them here for convenience sake:

 

I basically just made the dough in my bread maker, which takes 50 minutes including rising time, then got together what toppings I could find. In the end I used eggplant dip as a base (mmm garlic-y), added mushrooms, tomato, capsicum, onion and olives. Topped it all in this really nice cheese (it's similar to Parmesan except it is much smoother and doesn't crumble, plus it has peppercorns in it). It took ages to bake (as you can see from the thick crust!!) however it was delicious!

I'll definitely be trying it again soon, probably with a thinner base next time just to see how it turns out. Not a bad effort considering I started cooking at about 10:30PM last night!! For some reason I'm only ever inspired at midnight, so I'm not quite sure what that is all about.
